Rustic Chicken and Vegetable Soup
A homemade comfort soup with chicken, celery, leeks and carrots. Perfect for cold days.

Ingredients
- 600 g Chicken thighs
- 200 g Carrots
- 200 g Leeks
- 100 g Celery
- 1 l Water
- 20 g Butter
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Clean and cut the vegetables into uniform pieces.
Step 2
Melt the butter in a pot and brown the chicken thighs.
Step 3
Add the vegetables and water. Bring to a boil then reduce heat.
Step 4
Simmer for 30 minutes until the chicken is cooked through.
Step 5
Season with salt and pepper. Serve hot.
