Rustic Carrot and Celery Soup
A comforting and light soup made with carrots, celery, and potatoes. Ideal for a light lunch or simple dinner.

Ingredients
- 300 g Carrots
- 150 g Celery stalks
- 200 g Potatoes
- 800 ml Water
- 1 tbsp Oil
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Peel and cut the carrots and potatoes into small cubes.
Step 2
Finely slice the celery stalks.
Step 3
Heat the oil in a pot and sauté the vegetables for 3 minutes.
Step 4
Cover with cold water, season with salt and pepper. Bring to a boil.
Step 5
Reduce heat and simmer for 20 minutes until the vegetables are very tender.
Step 6
Blend the soup until smooth and creamy.
