Spicy Miso Soup with Firm Tofu and Bok Choy
A bold miso soup with pan-seared firm tofu, crisp bok choy, and shiitake mushrooms. A reinvented Japanese classic, packed with plant-based protein.

Ingredients
- 300 g firm tofu
- 2 tbsp miso paste
- 200 g bok choy
- 100 g shiitake mushrooms
- 10 g fresh ginger
- 1 tbsp soy sauce
Instructions
Step 1
Cut the tofu into 2 cm cubes. Slice the bok choy and shiitake mushrooms. Grate the ginger.
Step 2
Sauté the tofu in a pot with a drizzle of oil until golden on each side.
Step 3
Add 700 ml of water, ginger, shiitake mushrooms, and soy sauce. Bring to a simmer and cook for 5 minutes.
Step 4
Add the bok choy and cook for 3 minutes. Remove from heat, dissolve the miso paste in a little broth, then stir it in. Serve hot.
