Miso Salmon and Spinach Soup
A comforting Japanese soup made with white miso, tender salmon, and fresh spinach, ready in 20 minutes for a light, protein-rich meal.

Ingredients
- 300 g salmon fillet
- 150 g fresh spinach
- 2 tbsp white miso paste
- 3 stems green onion
- 1 tsp fresh ginger
Instructions
Step 1
Cut the salmon into 2 cm cubes. Slice the green onions and grate the ginger.
Step 2
Bring 600 ml of water to a boil. Add the ginger and salmon cubes, cook for 8 minutes over medium heat.
Step 3
Add the spinach and cook for 2 minutes until wilted.
Step 4
Remove from heat, dissolve the miso in a little broth then stir it in. Garnish with green onions and serve.
