Simplified Minestrone Soup
A rustic and warm Italian soup with vegetables and pasta. Ready in 25 minutes and very filling.

Ingredients
- 200 g Carrots
- 150 g Cauliflower
- 150 g Broccoli
- 100 g Small pasta (ditalini or penne)
- 1 l Water
- 2 tbsp Olive oil
- à volonté Salt
- à volonté Pepper
Instructions
Step 1
Peel and cut the carrots into small dice.
Step 2
Cut the cauliflower and broccoli into small florets.
Step 3
Pour water into a pot and bring to a boil.
Step 4
Add the carrots and cook for 5 minutes, then add the cauliflower and broccoli.
Step 5
Add the pasta and olive oil, cook 8-10 minutes until the pasta is al dente.
Step 6
Season with salt and pepper and serve hot.
