Homemade Minestrone Soup
A hearty Italian soup with pasta, carrots, celery, and beets. Simmered for 25 minutes for a warm and nutritious meal.

Ingredients
- 2 piece Carrots
- 1 stalk Celery stalk
- 1 piece Beet
- 100 g Penne
- 1 l Water
- 2 tbsp Olive oil
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Peel and dice the carrots, celery, and beet into small cubes on a cutting board.
Step 2
Pour the oil into the pot and add the vegetables over medium heat for 2 minutes.
Step 3
Pour in the water and bring to a boil, then add the penne.
Step 4
Simmer for 12 minutes until the pasta is cooked and the vegetables are tender.
Step 5
Season with salt and pepper to taste.
