Refrigerator Minestrone Soup
A hearty Italian soup made with whatever vegetables you have on hand and pasta. Comforting and perfect for using up leftovers.

Ingredients
- 100 g Penne
- 2 piece Carrots
- 2 stalk Celery stalks
- 100 g Olives
- 1.5 tsp Salt
- 1 pinch Pepper
- 2 tbsp Olive oil
- 1.5 l Water
Instructions
Step 1
Clean and cut the carrots and celery into small, even dice.
Step 2
Heat the oil in a pot and sauté the vegetables for 5 minutes over medium heat.
Step 3
Add the water, cover and simmer for 10 minutes. Add the penne and continue cooking for 10 minutes.
Step 4
Add the olives, season with salt and pepper, and serve hot.
