Minestrone Pasta Soup

Ingredients
- 80 g Penne
- 2 piece Carrots
- 2 stalk Celery stalk
- 50 g Olives
- 1 piece Onion
- 800 ml Vegetable broth
- 200 g Canned peeled tomatoes
- 2 tbsp Olive oil
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Dice the carrots, celery, and onion.
Step 2
Heat the olive oil in a Dutch oven and sauté the onion, carrots, and celery for 5 minutes.
Step 3
Pour in the vegetable broth and canned tomatoes, bring to a boil.
Step 4
Add the penne and olives, cook for 10 minutes.
Step 5
Season with salt and pepper, serve hot.
