Vegetable Minestrone Soup
A hearty Italian soup featuring carrots, broccoli, and cauliflower, topped with pasta. Comforting and nutritious.

Ingredients
- 2 piece Carrots
- 200 g Broccoli
- 200 g Cauliflower
- 100 g Pasta
- 1 l Water
- 2 tbsp Olive oil
- 1 tsp Salt
- 1 pinch Pepper
Instructions
Step 1
Peel and dice the carrots. Cut the broccoli and cauliflower into small florets.
Step 2
Heat the olive oil in a pot and add the carrots, cook for 3 minutes.
Step 3
Pour in the water, bring to a boil and add the broccoli and cauliflower.
Step 4
Let simmer for 10 minutes, then add the pasta and cook until tender (8-10 minutes).
Step 5
Season with salt and pepper. Serve hot.
