Lentil & Spinach Soup

Ingredients
- 200 g Red lentils
- 150 g Fresh spinach
- 2 piece Carrots
- 1 stalk Celery
- 1 L Water
- 1 tbsp Olive oil
- 1 tsp Salt
- 0.5 tsp Pepper
Instructions
Step 1
Peel and dice the carrots and celery into small pieces.
Step 2
Heat the olive oil in the pot and sauté the carrots and celery for 3 minutes.
Step 3
Add the red lentils and water, bring to a boil.
Step 4
Reduce heat and simmer for 15 minutes.
Step 5
Add the spinach and cook for an additional 5 minutes.
Step 6
Season with salt and pepper to taste, serve hot.
