Simple Italian Minestrone Soup
A hearty Italian peasant soup loaded with vegetables, pasta, and pantry staples. Comforting and very simple to prepare.

Ingredients
- 100 g Spaghetti
- 200 g Carrots
- 100 g Celery
- 50 g Olives
- 1 l Water
- 2 tbsp Olive oil
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Peel and cut the carrots into dice. Cut the celery into small pieces.
Step 2
Heat the olive oil in a pot and sauté the carrots and celery for 3 minutes.
Step 3
Pour in the water and bring to a boil. Season with salt and pepper.
Step 4
Break the spaghetti into small pieces and add to the soup with the olives.
Step 5
Cook for 12 minutes until the pasta is tender and the vegetables are cooked through.
