Indian Tempeh and Cauliflower Soup
A spiced tempeh soup with roasted cauliflower and spinach in a turmeric and garam masala broth. Protein-rich and aromatic with Indian flavors.

Ingredients
- 250 g tempeh
- 200 g cauliflower
- 100 g fresh spinach
- 1.5 tsp garam masala
- 1 tsp turmeric
- 100 ml coconut milk
Instructions
Step 1
Cut tempeh into 1.5 cm cubes. Cut cauliflower into small florets.
Step 2
Brown the tempeh in a pot with a drizzle of oil for 4 minutes. Add garam masala and turmeric, cook for 1 minute.
Step 3
Add cauliflower, 500 ml water, and coconut milk. Bring to a boil and simmer for 12 minutes.
Step 4
Add spinach and cook for 2 minutes until wilted. Season and serve.
