Broccoli, Carrot and Potato Soup with Cheese Topping
A velvety and comforting soup made with vegetables, finished with melted cheese for extra indulgence.

Ingredients
- 300 g Potatoes
- 250 g Broccoli
- 200 g Carrot
- 750 ml Water
- 80 g Grated Gruyère
- 15 g Butter
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Cut the potatoes into cubes and the carrots into rounds. Place in the pot with water and cook for 10 minutes.
Step 2
Add the broccoli florets and cook for 8 more minutes.
Step 3
Pour the soup into bowls and generously top with grated Gruyère. Add a knob of butter.
Step 4
Microwave for 2 minutes to allow the cheese to melt slightly. Season with salt and pepper.
