Gratinéed Onion and Comté Soup
A classic French onion soup reinvented without bread croutons, featuring melted comté cheese stirred directly into the broth with an express oven gratin finish.

Ingredients
- 4 pieces onions
- 100 g grated comté
- 600 ml vegetable broth
- 1 piece leek
- 20 g butter
- 2 sprigs fresh thyme
Instructions
Step 1
Thinly slice the onions and leek. Melt butter in a saucepan and cook the onions and leek over low heat for 15 minutes until golden brown.
Step 2
Add the broth and thyme, bring to a boil then simmer for 5 minutes.
Step 3
Divide the soup into oven-safe bowls. Generously top with grated comté.
Step 4
Place under the oven broiler for 3-4 minutes until the cheese is golden and bubbling. Serve piping hot.
