Fish and Vegetable Soup
A simple Mediterranean soup with white fish, tomatoes, cucumber, and a squeeze of fresh lemon. Comforting yet light.

Ingredients
- 400 g White fish
- 300 g Tomatoes
- 1 piece Cucumber
- 800 ml Water
- 2 tbsp Olive oil
- 1 pinch Salt
- 1 pinch Pepper
- 0.5 piece Lemon
Instructions
Step 1
Dice the tomatoes and cucumber into small cubes. Cut the fish into cubes.
Step 2
Heat the oil in a pot and sauté the tomatoes for 2 minutes.
Step 3
Pour in the water and bring to a boil.
Step 4
Add the fish and cook for 8 minutes over medium heat until cooked through.
Step 5
Add the diced cucumber and cook for 2 more minutes.
Step 6
Season with salt, pepper, and a squeeze of fresh lemon juice. Serve hot.
