Green Curry Monkfish Soup with Broccoli
Thai green curry soup with firm monkfish and crisp broccoli in a fragrant broth infused with Thai basil.

Ingredients
- 300 g Monkfish tail
- 200 g Broccoli
- 1 tbsp Green curry paste
- 150 ml Light coconut milk
- 1 piece Zucchini
- 1 bunch Thai basil
Instructions
Step 1
Cut the monkfish into chunks, broccoli into florets, and zucchini into rounds.
Step 2
In a pot, heat the curry paste for 1 minute, then add the coconut milk and 300 ml of water.
Step 3
Add the broccoli and zucchini, cook for 5 minutes over medium heat.
Step 4
Add the monkfish and cook for 6 minutes over low heat. Sprinkle with Thai basil and serve.
