French Lentil and Spinach Soup
A comforting and nutritious soup made with lentils, carrots, celery, and spinach. Perfect for a weeknight dinner.

Ingredients
- 200 g Red lentils
- 2 piece Carrots
- 1 stalk Celery
- 150 g Fresh spinach
- 1 l Water
- 1 pinch Salt
- 1 pinch Pepper
- 2 tbsp Olive oil
Instructions
Step 1
Peel and dice the carrots and celery into small cubes
Step 2
Sauté the diced vegetables in a pot with olive oil for 2 minutes
Step 3
Add the red lentils and cover with water, bring to a boil
Step 4
Simmer for 15 minutes until the lentils are tender
Step 5
Add the fresh spinach and cook for 3 more minutes
Step 6
Season with salt and pepper, serve hot
