Lentil and Spinach Soup
A comforting and nutritious soup, perfect for a winter evening. Made simply with pantry staples and fresh spinach.

Ingredients
- 200 g Red lentils
- 150 g Fresh spinach
- 2 piece Carrots
- 1 stalk Celery
- 1 L Water
- 2 tbsp Olive oil
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Peel and dice the carrots and celery into small cubes.
Step 2
Heat the oil in a pot and sauté the carrot and celery cubes for 3 minutes.
Step 3
Add the lentils and water, bring to a boil.
Step 4
Reduce heat and simmer for 20 minutes until the lentils are tender.
Step 5
Add the fresh spinach, stir, and cook for 2 minutes.
Step 6
Season with salt and pepper. Serve hot.
