Lentil and Spinach Soup
A hearty and nutritious soup perfect for a winter evening. Packed with protein from lentils and fresh spinach.

Ingredients
- 200 g Red lentils
- 150 g Fresh spinach
- 2 piece Carrots
- 1 stalk Celery
- 1 L Water
- 2 tbsp Olive oil
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Peel and dice carrots and celery into small pieces.
Step 2
Sauté carrot and celery dice in oil in a pot for 3 minutes.
Step 3
Add lentils and water, bring to a boil.
Step 4
Simmer for 15 minutes over medium heat until lentils are tender.
Step 5
Add fresh spinach and cook for 3 more minutes.
Step 6
Season with salt and pepper to taste. Serve hot.
