Lentil and Zucchini Soup
A simple and soothing soup, perfect for a weeknight. Lentils provide the protein while zucchini adds substance and volume.

Ingredients
- 200 g Lentils
- 1 medium Zucchini
- 200 ml Tomato sauce
- 800 ml Water
- 2 tbsp Olive oil
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
In a saucepan, heat the olive oil and add the rinsed lentils.
Step 2
Pour in the water and tomato sauce, and bring to a boil.
Step 3
Cut the zucchini into small dice and add it to the soup.
Step 4
Simmer for 20 minutes until the lentils are tender.
Step 5
Season with salt and pepper to taste.
Step 6
Serve hot in bowls.
