Comforting Red Lentil Soup
A simple and flavorful soup made with red lentils, perfect for a weeknight dinner. Ready in less than 30 minutes, with a silky texture if you use an immersion blender.

Ingredients
- 200 g Red lentils
- 1 L Water
- 1 pinch Salt
- 1 pinch Pepper
- 2 tbsp Olive oil
Instructions
Step 1
Rinse the red lentils under cold water.
Step 2
Pour water into the pot and bring to a boil.
Step 3
Add the lentils, salt, and pepper. Simmer for 15-18 minutes until the lentils are tender.
Step 4
Partially blend with an immersion blender for a smooth but slightly textured consistency.
Step 5
Stir in the olive oil and serve hot.
