Lentil and Spinach Soup
A comforting and nutritious soup prepared in no time. Perfect for a winter evening with toasted bread.

Ingredients
- 250 g Lentils
- 150 g Fresh spinach
- 2 piece Carrots
- 1 stalk Celery
- 1 l Water
- 1 tsp Salt
- 1 pinch Pepper
- 2 tbsp Olive oil
Instructions
Step 1
Peel and cut the carrots and celery into small dice
Step 2
Sauté the diced vegetables in a pot with olive oil
Step 3
Add the rinsed lentils and water
Step 4
Bring to a boil and cook for 15-17 minutes
Step 5
Add fresh spinach, season with salt and pepper
Step 6
Let simmer for 1-2 minutes and serve immediately
