Lentil Soup with Carrots and Spinach
A comforting and nutritious soup, perfect for a winter evening. Tender lentils, sweet carrots, and fresh spinach in a simple and flavorful broth.

Ingredients
- 200 g Red lentils
- 3 piece Carrots
- 150 g Fresh spinach
- 2 stalks Celery
- 1 liter Water
- 2 tbsp Olive oil
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Peel and dice the carrots and celery into small cubes
Step 2
Pour olive oil into a pot and sauté the carrots and celery for 3 minutes
Step 3
Add the red lentils and water, bring to a boil
Step 4
Let simmer for 15 minutes until the lentils are tender
Step 5
Add the fresh spinach, season with salt and pepper. Cook for 2-3 more minutes
Step 6
Serve hot
