Creamy Zucchini Soup
A velvety and comforting soup made with simple zucchini and basic pantry staples. Perfect for a weeknight dinner, can be made with butter or oil.

Ingredients
- 3 medium Zucchini
- 500 ml Water
- 1 tbsp Butter
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Wash and dice the zucchini.
Step 2
Melt the butter in a pot over medium heat.
Step 3
Add the zucchini, stir, and cook for 3-4 minutes.
Step 4
Pour in the water, add salt and pepper. Simmer for 15 minutes until zucchini is very tender.
Step 5
Blend the soup with an immersion blender or transfer to a blender until smooth.
Step 6
Adjust seasoning and serve hot.
