Butternut Squash and Apple Soup with Curry

Ingredients
- 500 g Butternut squash
- 2 piece Apple
- 200 ml Coconut milk
- 700 ml Vegetable broth
- 2 tsp Curry powder
- 1 piece Onion
- 2 tbsp Oil
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Peel and cut the squash into cubes, peel the apple and onion, and cut them into pieces.
Step 2
Heat the oil in a pot and sauté the onion for 2 minutes.
Step 3
Add the curry powder and cook for 1 minute, stirring.
Step 4
Add the squash, apple, and broth. Bring to a boil, then reduce heat and cook for 15 minutes.
Step 5
Blend the soup until smooth. Add the coconut milk, season with salt and pepper. Cook for 2 additional minutes.
