Carrot and Potato Soup
A warm and comforting soup, naturally creamy without any cream. Ideal for a winter evening.

Ingredients
- 400 g Potatoes
- 400 g Carrots
- 1200 ml Water
- 2 tbsp Olive oil
- 1 tsp Salt
- 0.5 tsp Pepper
Instructions
Step 1
Peel and cut the carrots and potatoes into large chunks.
Step 2
Heat the oil in the pot and sauté the vegetables for 2 minutes.
Step 3
Pour in the water, season with salt and pepper, then bring to a boil.
Step 4
Simmer for 20 minutes until the vegetables are very tender.
Step 5
Blend the soup with an immersion blender to achieve a smooth texture.
