Carrot, Beet, and Celery Soup

Ingredients
- 300 g Carrots
- 200 g Beet
- 100 g Celery stalks
- 800 ml Water
- 2 tbsp Oil
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Peel and cut the carrots, beets, and celery into small cubes.
Step 2
Heat the oil in a Dutch oven and sauté the vegetables for 3 minutes.
Step 3
Add water, bring to a boil, and cook for 15 minutes.
Step 4
Blend the soup until smooth, then season with salt and pepper.
