Carrot, Beet, and Celery Soup
A vibrant and nutritious soup that's warming and comforting. Easy to prepare with a blender, it's delicious served hot with a drizzle of olive oil.

Ingredients
- 300 g Carrots
- 200 g Beet
- 100 g Celery stalks
- 800 ml Water
- 1 tbsp Olive oil
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Peel and chop the carrots, beet, and celery into pieces.
Step 2
Place the vegetables in a pot with water and bring to a boil.
Step 3
Simmer for 15-18 minutes until the vegetables are tender.
Step 4
Blend the soup until smooth. Season to taste and drizzle with olive oil.
