Comforting Carrot Soup
A smooth, velvety carrot soup perfect for a cozy evening. Can be made with vegetable broth or simply water.

Ingredients
- 600 g Carrot
- 750 ml Water
- 1 tbsp Butter
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Peel and slice the carrots into rounds.
Step 2
Sauté the carrots in butter in the pot for 2 minutes.
Step 3
Pour in the water and cook covered for 15-18 minutes until the carrots are very tender.
Step 4
Blend with an immersion blender until smooth. Season and serve hot.
