Carrot and Beet Soup with Celery
A velvety, colorful and comforting soup. Perfect for a weeknight dinner, rich in natural flavors and very simple to prepare.

Ingredients
- 300 g Carrots
- 200 g Beet
- 100 g Celery stalk
- 1 l Water
- 5 g Salt
- 2 g Pepper
- 15 ml Olive oil
Instructions
Step 1
Peel and cut the carrots, beets and celery into 2 cm cubes.
Step 2
Pour the water into the saucepan and bring to a boil.
Step 3
Add all the vegetables and simmer for 15 minutes until softened.
Step 4
Blend with an immersion blender until smooth.
Step 5
Season with salt and pepper, drizzle in the olive oil.
