Broccoli and Carrot Soup with Gruyère
A simple and satisfying velvety soup with broccoli, carrots and a touch of Gruyère for extra flavor.

Ingredients
- 300 g Broccoli
- 300 g Carrots
- 200 g Potatoes
- 80 g Grated Gruyère
- 1 l Water
- 20 g Butter
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Peel and cut potatoes, carrots and broccoli into cubes.
Step 2
Melt butter in a pot, add vegetables and sauté for 3 minutes.
Step 3
Pour in 1l of water, bring to a boil and cook for 15 minutes until vegetables are tender.
Step 4
Blend the soup with an immersion blender or pass through a food mill. Add the Gruyère, stir and serve hot.
