Broccoli and Carrot Soup with Gruyère
A comforting and velvety soup perfect for a weeknight. Blended smooth and enriched with melted Gruyère.

Ingredients
- 300 g Broccoli
- 200 g Carrot
- 600 ml Water
- 50 g Gruyère
- 15 g Butter
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Cut the broccoli and carrot into chunks.
Step 2
Melt the butter in a pot and add the vegetables.
Step 3
Pour in the water and simmer for 12 minutes until tender.
Step 4
Blend the soup with an immersion blender until smooth.
Step 5
Stir in the grated Gruyère, season with salt and pepper, and let melt for 1 minute.
