Creamy Lentil and Spinach Soup
A comforting and nutritious soup ready in 25 minutes. Perfect for a weeknight dinner, simply served with bread.

Ingredients
- 200 g Red lentils
- 150 g Fresh spinach
- 2 piece Carrots
- 1 stalk Celery
- 1 l Water
- 20 g Butter
- à to taste Salt
- à to taste Pepper
Instructions
Step 1
Peel and dice the carrots and celery into small pieces.
Step 2
Sauté the vegetables in butter in a pot for 3 minutes.
Step 3
Add the lentils and water, bring to a boil.
Step 4
Simmer over medium heat for 15 minutes until the lentils are tender.
Step 5
Stir in the fresh spinach and mix until wilted.
Step 6
Blend half the soup for a creamy texture, or leave it chunky according to your preference.
Step 7
Season with salt and pepper, and serve hot.
