Creamy Quinoa and Coconut Soup

Ingredients
- 150 g Quinoa
- 400 ml Coconut milk
- 500 ml Water
- 25 g Butter
- 1 tsp Salt
- 1 pinch Pepper
Instructions
Step 1
Rinse the quinoa under cold water.
Step 2
Melt the butter in a pot.
Step 3
Add the rinsed quinoa and pour in the water and coconut milk.
Step 4
Bring to a boil then reduce heat. Simmer for 15 minutes until the quinoa is tender.
Step 5
Partially blend with an immersion blender for a semi-smooth texture.
Step 6
Season with salt and pepper before serving.
