Creamy Broccoli and Carrot Soup

Ingredients
- 300 g Broccoli
- 300 g Carrots
- 150 g Potatoes
- 1 L Water
- 80 g Gruyère
- 20 g Butter
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Cut the broccoli into florets and cut the carrots and potatoes into chunks. Place in a pot.
Step 2
Cover with water, add a pinch of salt and bring to a boil. Cook for 15-18 minutes until everything is tender.
Step 3
Blend the soup with an immersion blender until you get a smooth and creamy texture.
Step 4
Add the butter and grated Gruyère. Whisk to incorporate well. Season with salt and pepper to taste.
Step 5
Serve hot in bowls.
