Lentil and Seasonal Vegetable Soup
A hearty and nutritious soup made with lentils, carrots, and celery. Perfect for a winter evening, serve with crusty bread.

Ingredients
- 200 g Red lentils
- 2 piece Carrots
- 1 stalk Celery
- 150 g Potatoes
- 1 l Water
- 1 pinch Salt
- 1 pinch Pepper
- 2 tbsp Olive oil
Instructions
Step 1
Peel and dice the carrots, celery, and potatoes into small pieces.
Step 2
Heat the olive oil in a pot and sauté the vegetables for 3 minutes.
Step 3
Add the lentils, water, salt, and pepper. Bring to a boil.
Step 4
Reduce heat and simmer for 20-25 minutes until the lentils and vegetables are tender.
Step 5
Serve hot with a drizzle of olive oil.
