Lentil and Vegetable Soup
A comforting and nutritious soup made with lentils and fresh vegetables. Perfect for a winter evening, packed with plant-based protein.

Ingredients
- 200 g Lentils
- 2 piece Carrots
- 1 stalk Celery
- 2 piece Potatoes
- 1 L Water
- 2 tbsp Olive oil
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Peel and cut the carrots, celery, and potatoes into small dice.
Step 2
Heat the olive oil in a pot and sauté the vegetables for 3 minutes.
Step 3
Add the lentils and pour in the water. Bring to a boil.
Step 4
Reduce the heat and simmer for 20 minutes until the lentils and vegetables are tender.
Step 5
Season with salt and pepper. Serve hot.
