Lentil and Vegetable Soup
A comforting and nutritious soup made with lentils, carrots and celery. Perfect for a winter evening and ready in less than 30 minutes.

Ingredients
- 200 g Lentils
- 2 piece Carrots
- 1 stalk Celery
- 1 l Water
- 1 pinch Salt
- 1 pinch Pepper
- 1 tbsp Olive oil
Instructions
Step 1
Peel and dice the carrots and celery into small pieces
Step 2
In a pot, heat the olive oil and add the vegetables. Let them soften for 3 minutes while stirring
Step 3
Add the lentils and water. Bring to a boil
Step 4
Reduce heat and simmer for 15-20 minutes until the lentils are cooked
Step 5
Season with salt and pepper to taste. Pour into bowls and serve hot
