Lentil and Spinach Soup

Ingredients
- 200 g Red lentils
- 150 g Fresh spinach
- 2 pieces Carrots
- 1 stalk Celery
- 1 l Water
- 2 tbsp Olive oil
- 1 tsp Salt
- 1 pinch Pepper
Instructions
Step 1
Peel and cut the carrots and celery into small dice.
Step 2
Sauté the vegetables in a pan with olive oil for 3 minutes.
Step 3
Add the lentils and water, bring to a boil.
Step 4
Simmer for 20 minutes until the lentils are tender.
Step 5
Add the fresh spinach, season with salt and pepper, and partially blend if desired.
