Lentil and Spinach Soup
A comforting and nutritious soup, perfect for a winter evening. Red lentils that cook quickly, fresh spinach, and carrots for added flavor.

Ingredients
- 200 g Red lentils
- 150 g Fresh spinach
- 2 piece Carrots
- 1 stalk Celery
- 1 L Water
- 2 tbsp Olive oil
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Peel and chop the carrots and celery into small pieces.
Step 2
Heat the oil in the pot and sauté the carrots and celery for 3 minutes.
Step 3
Add the lentils and water, bring to a boil.
Step 4
Simmer for 15 minutes over medium heat.
Step 5
Add the spinach, cook for 2 more minutes. Season with salt and pepper.
