Lentil and Curry Soup
A comforting soup inspired by Asian and Indian cuisines, rich in protein and very flavorful.

Ingredients
- 200 g Lentils
- 2 piece Carrots
- 300 g Cauliflower
- 1.5 tsp Curry powder
- 300 ml Coconut milk
- 800 ml Water
- 1 tbsp Olive oil
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Dice the carrots and cut the cauliflower into small florets.
Step 2
Heat the olive oil in a saucepan and add the vegetables, cooking for 3 minutes.
Step 3
Add the curry powder and stir well to release the flavors.
Step 4
Pour in the water and lentils, then bring to a boil.
Step 5
Lower the heat and simmer for 15 minutes until the lentils are tender.
Step 6
Add the coconut milk, stir, and heat for 3 minutes. Season with salt and pepper.
