Vegetable and Lentil Soup - Simplified Minestrone
A hearty Italian classic filled with vegetables and lentils. A complete, nutritious meal in a bowl.

Ingredients
- 150 g Lentils
- 250 g Potatoes
- 2 piece Carrots
- 2 stalks Celery
- 100 g Spinach
- 1.2 L Water
- 2 tbsp Olive oil
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Dice the potatoes and cut the carrots and celery into small pieces.
Step 2
Heat the olive oil in a pot and sauté the carrots and celery for 3 minutes.
Step 3
Add the potatoes and lentils, pour in the water, and bring to a boil.
Step 4
Simmer for 18 minutes until the lentils and potatoes are tender.
Step 5
Add the spinach and cook for 2 minutes.
Step 6
Season with salt and pepper, and serve hot.
