Vegetable and Spinach Soup
A comforting and simple soup made with whatever vegetables you have on hand, perfect for a winter evening. Ready in 25 minutes.

Ingredients
- 3 medium Potatoes
- 2 medium Carrots
- 2 stalk Celery
- 200 g Spinach
- 1 L Water
- 1 tsp Salt
- 0.5 tsp Pepper
- 1 tbsp Olive oil
Instructions
Step 1
Peel and cut the potatoes, carrots and celery into small dice.
Step 2
Heat the oil in the pot and add the vegetables.
Step 3
Pour in the water, bring to a boil and cook for 10 minutes.
Step 4
Add the spinach, let cook for 3-4 minutes. Season with salt and pepper.
Step 5
Partially blend for a thicker texture if desired.
