Smoked Tofu, Leek, and Mushroom Soup

Ingredients
- 300 g smoked tofu
- 2 piece leek
- 150 g button mushrooms
- 2 clove garlic
- 3 sprig fresh thyme
- 600 ml vegetable stock
Instructions
Step 1
Cut the smoked tofu into cubes. Slice the leeks (white and tender green parts) and slice the mushrooms. Mince the garlic.
Step 2
Sauté the leeks and garlic in a pot with a drizzle of oil for 5 minutes over medium heat.
Step 3
Add the mushrooms and thyme, cook for 3 minutes. Pour in the stock and bring to a simmer.
Step 4
Add the smoked tofu, let simmer for 8 minutes. Remove the thyme, season, and serve.
