Asian Fennel and Broccoli Soup with Walnuts
A light and aromatic soup inspired by Asian cuisine, combining fennel, broccoli, and crushed walnuts for added texture. Warming and nutritious.

Ingredients
- 300 g Fennel
- 350 g Broccoli
- 80 g Walnuts
- 1000 ml Water
- 1 tbsp Mustard
- 2 tbsp Olive oil
- 3 g Salt
- 2 g Pepper
Instructions
Step 1
Clean and thinly slice the fennel, cut the broccoli into small florets.
Step 2
Sauté the fennel in a pot with olive oil for 5 minutes.
Step 3
Add the broccoli and water, bring to a boil.
Step 4
Simmer for 15 minutes until the vegetables are tender.
Step 5
Roughly crush the walnuts and add them to the soup with the mustard.
Step 6
Season with salt and pepper, and partially blend for a semi-smooth texture if desired.
