Beef and Onion Soup Gratinée
A classic French onion soup elevated with tender beef strips and topped with melted Gruyère cheese. A hearty and comforting one-dish meal.

Ingredients
- 300 g beef rump steak
- 3 piece yellow onions
- 2 branches celery stalks
- 3 sprig fresh thyme
- 60 g grated Gruyère
- 20 g butter
- 700 ml beef broth
Instructions
Step 1
Thinly slice the onions and celery. Cut the beef into fine strips.
Step 2
Melt the butter in a pot. Caramelize the onions and celery with the thyme for 10 minutes over medium heat.
Step 3
Add the beef, sear for 2 minutes. Pour in the broth and simmer for 7 minutes.
Step 4
Divide into oven-safe bowls, top with Gruyère, and broil for 3 minutes until golden.
