Ingredients
- 100 g Fresh spinach
- 1 piece Avocado
- 1 piece Egg
- 2 tsp Pumpkin seeds
- 1 tsp Smoked paprika
- 1 piece Lime
Instructions
Step 1
Bring a pot of water to a simmer. Gently place the egg in the water for 6 minutes for a perfect soft-boiled egg, then cool under cold running water.
Step 2
Blend the spinach, avocado flesh, lime juice, a pinch of salt, and 2 tbsp of ice water until creamy.
Step 3
Pour into a bowl, place the halved soft-boiled egg on top, sprinkle with pumpkin seeds, and dust with smoked paprika.
