Green Shakshuka with Spinach and Goat Cheese

Ingredients
- 200 g fresh spinach
- 4 pieces eggs
- 1 piece green bell pepper
- 80 g goat cheese log
- 2 cloves garlic
- 1 tsp ground cumin
- 2 tbsp olive oil
Instructions
Step 1
Sauté the minced garlic and diced pepper in olive oil over medium heat for 3 minutes.
Step 2
Add the spinach and cumin, cook for 3 minutes until the spinach is wilted. Season with salt and pepper.
Step 3
Make 4 wells in the mixture, crack an egg into each one. Arrange goat cheese slices between the eggs.
Step 4
Cover and cook over low heat for 7 minutes until the egg whites are set and the yolks are still runny.
