Smoked Mackerel Shakshuka

Ingredients
- 4 pieces eggs
- 180 g smoked mackerel fillets
- 400 g crushed tomatoes
- 1 large green bell pepper
- 1 tsp ground cumin
- 1 tsp Espelette pepper
- 1 tbsp olive oil
Instructions
Step 1
Dice the bell pepper and flake the smoked mackerel into bite-sized pieces.
Step 2
Sauté the pepper in olive oil over medium heat for 4 minutes.
Step 3
Add the crushed tomatoes, cumin, and Espelette pepper. Simmer for 6 minutes.
Step 4
Distribute the mackerel in the sauce. Create 4 wells and crack an egg into each. Cover and cook over low heat for 8 minutes.
