Shakshuka with Merguez, Tomatoes and Peppers
Poached eggs in a spiced tomato sauce with peppers, topped with grilled merguez sausages. A comforting North African dish packed with protein.

Ingredients
- 4 piece eggs
- 200 g merguez
- 400 g crushed tomatoes
- 1 piece red bell pepper
- 1 piece onion
- 1 tsp ground cumin
- 1 tbsp olive oil
Instructions
Step 1
Cut the merguez into chunks, and finely dice the onion and pepper.
Step 2
Brown the merguez in a skillet with olive oil for 4 minutes. Add the onion and pepper, cook for 3 minutes.
Step 3
Pour in the crushed tomatoes, add cumin, season with salt and pepper. Let simmer for 5 minutes.
Step 4
Make 4 small wells in the sauce and crack the eggs into them. Cover and cook for 5 minutes until the whites are set.
